the easiest side of your life

Wondering what to do with all that zucchini on sale at the store?
Here is a quick and easy side dish that is nutritious and delicious.

Breaded Zucchini Chips
adapted from Tammy Goodman
Ingredients
Panko bread crumbs
Grated Parmesan cheese
Egg whites from 2 eggs
Zucchini


Cut your zucchini into 1 inch slices.

Prepare bowls of egg whites and panko bread crumbs mixed with parmesan cheese.

Dip each slice into the egg whites...

...and then the bread crumb mixture.

Place on a baking sheet. Bake at 475 degrees for 15 minutes, or until browned; flipping once.

I said it was easy.
